Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) red enchilada sauce
- 1 can (4 oz) chopped green chilies
- 8–10 corn tortillas
- 1 1/2 cups shredded cheddar cheese or Mexican blend cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
- Olive oil or vegetable oil for frying
- Optional toppings: sour cream, sliced olives, diced tomatoes, avocado, sliced jalapeños
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté onion until translucent.
- Add garlic and cook 1 minute more.
- Add ground beef, breaking apart until fully cooked. Season with salt and pepper.
- Stir in chopped green chilies, cooking for 2 minutes.
- Quick-fry each tortilla in a separate skillet until pliable; drain on paper towels.
- Pour a bit of enchilada sauce into a 9×13-inch baking dish.
- Spoon 2–3 tablespoons of beef mixture onto each tortilla, add cheese, and roll tightly. Place seam-side down in dish.
- Pour remaining sauce over the top and sprinkle with remaining cheese.
- Bake approximately 20 minutes until cheese is melted and bubbly.
- Let rest a few moments, then garnish with cilantro before serving.
