A cozy and protein-packed baked breakfast made with cottage cheese, apples, oats, and warm cinnamon. Perfect for meal prep or a healthy morning treat.
Ingredients
- 1 ½ cups cottage cheese
- 2 large eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- ½ cup rolled oats
- 1 tsp ground cinnamon
- ½ tsp baking powder
- 1 medium apple, diced
- ¼ tsp salt
- 2 tbsp chopped walnuts or pecans (optional)
- 1 tbsp butter or oil for greasing the dish
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish or 8×8-inch pan.
- In a large bowl, whisk together cottage cheese, eggs, maple syrup (or honey), and vanilla extract until well combined.
- Stir in rolled oats, cinnamon, baking powder, and salt until evenly mixed.
- Fold in the diced apple and optional nuts.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes until the center is set and the top is lightly golden.
- Cool for about 5 minutes before slicing. Serve warm with yogurt, extra apple slices, or a drizzle of maple syrup if desired.
Notes

- You can substitute pears for apples for a different flavor.
