Description

A cozy and protein-packed baked breakfast made with cottage cheese, apples, oats, and warm cinnamon. Perfect for meal prep or a healthy morning treat.


Ingredients

  • 1 ½ cups cottage cheese
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ½ cup rolled oats
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • 1 medium apple, diced
  • ¼ tsp salt
  • 2 tbsp chopped walnuts or pecans (optional)
  • 1 tbsp butter or oil for greasing the dish


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a small baking dish or 8×8-inch pan.
  2. In a large bowl, whisk together cottage cheese, eggs, maple syrup (or honey), and vanilla extract until well combined.
  3. Stir in rolled oats, cinnamon, baking powder, and salt until evenly mixed.
  4. Fold in the diced apple and optional nuts.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 30–35 minutes until the center is set and the top is lightly golden.
  7. Cool for about 5 minutes before slicing. Serve warm with yogurt, extra apple slices, or a drizzle of maple syrup if desired.
