Description
Delicious Asian Chicken Fried Rice with a savory sauce, tender chicken, vegetables, eggs, and bacon. Quick, colorful, and perfect for a satisfying meal.
Ingredients
- 2.5 tbsp Chinese cooking wine
- 1.5 tbsp oyster sauce (Lee Kum Kee Premium)
- 4 tbsp light soy sauce
- 3/4 tsp sesame oil
- 1/4 tsp white pepper
- 1/4 tsp ground ginger
- 2 tbsp oil
- 2 eggs
- 180g chicken breast, cut into 1/2-inch pieces
- 2 garlic cloves, minced
- 1/2 onion, diced
- 120g bacon, cut into 1/2-inch pieces
- 1 small carrot, finely diced
- 1/2 cup corn
- 1/2 cup peas
- 2 cups cooked white rice (day-old, chilled)
- 3/4 cup green onions, sliced (whites and greens separated)
Instructions
- Combine all sauce ingredients (Chinese cooking wine, oyster sauce, soy sauce, sesame oil, white pepper, ground ginger) in a small bowl and stir well.
- Prep all ingredients: mince garlic, dice onion and carrot, slice green onions, cut chicken and beef into 1/2-inch pieces.
- Heat 1 tbsp oil in a wok/skillet over medium-high heat. Crack in eggs and scramble until cooked through (2-3 minutes). Transfer to a plate.
- Return wok to heat, add remaining 1 tbsp oil. Cook bacon 1 minute, then add garlic and onion for 30 seconds.
- Add chicken and cook 1–1.5 minutes until mostly cooked through.
- Add carrot, corn, and peas; stir-fry 1 minute until vegetables are slightly tender.
- Add rice and pour in sauce. Toss constantly for 1.5 minutes to coat rice evenly.
- Add cooked eggs and white parts of green onions; toss 30 seconds to combine. Garnish with green parts of green onions and serve immediately.
Notes
- Use day-old rice for best texture and non-clumpy fried rice.
- Adjust sauce ingredients to taste.
