Description

Baileys Buttercream Brownies are an irresistibly decadent treat featuring rich brownies topped with a creamy Baileys buttercream and silky ganache.


Ingredients

  • 1 box brownie mix plus required eggs, oil, and water as indicated on the box
  • ½ cup salted butter, softened
  • 2½ cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons Baileys Irish Cream
  • 3 to 4 tablespoons heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • ⅓ cup heavy whipping cream
  • 2 tablespoons Baileys Irish Cream


Instructions

  1. Preheat oven according to brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set aside.
  2. Prepare the brownies as directed on the package, substituting ¼ cup water with ¼ cup Baileys Irish Cream if desired. Pour batter into prepared pan and bake accordingly. Remove and cool completely.
  3. In a mixing bowl, beat softened butter, vanilla extract, and sifted powdered sugar until combined. Slowly add 2 tablespoons Baileys Irish Cream and continue beating. Add heavy cream one tablespoon at a time until frosting is fluffy and smooth.
  4. Spread buttercream evenly over cooled brownies. Chill in the freezer while preparing ganache.
  5. Combine ⅓ cup heavy cream with 2 tablespoons Baileys Irish Cream in a microwave-safe bowl. Heat until just simmering, pour over chocolate chips, let sit 3–4 minutes, then stir until smooth.
  6. Spread ganache evenly over chilled buttercream layer. Allow to set 45–60 minutes or refrigerate 15 minutes.
  7. Lift brownies using parchment paper flaps, cut into squares, and serve immediately.

Notes

  • For stronger Baileys flavor, increase Baileys Irish Cream in buttercream and ganache.
  • Store leftovers in an airtight container in the refrigerator.
