Description
Baileys Buttercream Brownies are an irresistibly decadent treat featuring rich brownies topped with a creamy Baileys buttercream and silky ganache.
Ingredients
- 1 box brownie mix plus required eggs, oil, and water as indicated on the box
- ½ cup salted butter, softened
- 2½ cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 tablespoons Baileys Irish Cream
- 3 to 4 tablespoons heavy whipping cream
- 1 cup semi-sweet chocolate chips
- ⅓ cup heavy whipping cream
- 2 tablespoons Baileys Irish Cream
Instructions
- Preheat oven according to brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set aside.
- Prepare the brownies as directed on the package, substituting ¼ cup water with ¼ cup Baileys Irish Cream if desired. Pour batter into prepared pan and bake accordingly. Remove and cool completely.
- In a mixing bowl, beat softened butter, vanilla extract, and sifted powdered sugar until combined. Slowly add 2 tablespoons Baileys Irish Cream and continue beating. Add heavy cream one tablespoon at a time until frosting is fluffy and smooth.
- Spread buttercream evenly over cooled brownies. Chill in the freezer while preparing ganache.
- Combine ⅓ cup heavy cream with 2 tablespoons Baileys Irish Cream in a microwave-safe bowl. Heat until just simmering, pour over chocolate chips, let sit 3–4 minutes, then stir until smooth.
- Spread ganache evenly over chilled buttercream layer. Allow to set 45–60 minutes or refrigerate 15 minutes.
- Lift brownies using parchment paper flaps, cut into squares, and serve immediately.
Notes
- For stronger Baileys flavor, increase Baileys Irish Cream in buttercream and ganache.
- Store leftovers in an airtight container in the refrigerator.
