Blueberry Greek Yogurt Bites are creamy, slightly tangy, and naturally sweet frozen treats perfect as a post-workout snack, afternoon pick-me-up, or guilt-free dessert.
Ingredients
- 1½ cups plain Greek yogurt (2% or full-fat for extra creaminess)
- 1 tablespoon honey or maple syrup (or erythritol for keto)
- ½ teaspoon vanilla extract
- ¾ cup fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional, for extra sweetness)
- 1 teaspoon chia seeds (optional, for texture and fiber)
Instructions
- Prepare the blueberry compote: In a small saucepan over medium heat, combine blueberries, lemon juice, and optional honey. Cook 5–6 minutes until softened and slightly jammy. Mash lightly. Stir in chia seeds if using. Cool completely.
- Make the yogurt base: In a medium bowl, whisk Greek yogurt, vanilla extract, and honey until smooth. Adjust sweetness if needed.
- Assemble the bites: Spoon about 1 tablespoon of yogurt mixture into each cavity of a silicone mini muffin or ice cube tray (¾ full).
- Add ½ teaspoon of cooled blueberry compote on top of each yogurt portion. Swirl gently with a toothpick or skewer to create a marbled effect.
- Freeze tray flat for at least 2 hours until firm.
- Serve & store: Carefully remove from molds. Store in an airtight container in the freezer. Let thaw 2–4 minutes before serving for a creamy consistency.
