Ingredients

  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 cup blueberries
  • Lemon juice for serving


Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt. Zest the lemon and set blueberries aside.
  2. In another bowl, whisk milk, egg, melted butter, vanilla extract, and lemon zest until smooth. Pour wet mix into dry ingredients and stir until combined; do not over-stir.
  3. Gently fold in blueberries.
  4. Preheat a griddle or non-stick skillet over medium heat and grease lightly. Use a tablespoon to pour small amounts of batter onto the skillet.
  5. Cook until bubbles form and edges are set, about 2–3 minutes per side.
  6. Transfer to a plate and serve warm with lemon juice or syrup.
