Description
Blueberry Swirl Yogurt Bites are a creamy, refreshing frozen snack featuring Greek yogurt and tangy blueberry compote swirled together for a deliciously satisfying gluten-free treat.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tablespoons honey or maple syrup
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 teaspoon cornstarch (optional)
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until softened.
- If using cornstarch, dissolve it in a small amount of water and stir into the blueberry mixture to thicken. Remove from heat and cool completely.
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness if desired.
- Spoon yogurt into silicone molds or mini muffin tins, filling about 3/4 full.
- Add a spoonful of cooled blueberry compote on top and swirl gently with a toothpick to create a marbled effect.
- Freeze for at least 3 hours until solid.
- Remove from molds and store in an airtight container in the freezer. Let sit 2–3 minutes before serving for best texture.
Notes
- Use coconut or almond yogurt for a dairy-free alternative.
- Replace honey or maple syrup with agave syrup or stevia for a vegan or lower-sugar option.
- Substitute blueberries with strawberries, raspberries, or blackberries for variety.
- Use arrowroot powder instead of cornstarch as a gluten-free thickener.
