Description

Blueberry Swirl Yogurt Bites are a creamy, refreshing frozen snack featuring Greek yogurt and tangy blueberry compote swirled together for a deliciously satisfying gluten-free treat.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cornstarch (optional)


Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until softened.
  2. If using cornstarch, dissolve it in a small amount of water and stir into the blueberry mixture to thicken. Remove from heat and cool completely.
  3. In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness if desired.
  4. Spoon yogurt into silicone molds or mini muffin tins, filling about 3/4 full.
  5. Add a spoonful of cooled blueberry compote on top and swirl gently with a toothpick to create a marbled effect.
  6. Freeze for at least 3 hours until solid.
  7. Remove from molds and store in an airtight container in the freezer. Let sit 2–3 minutes before serving for best texture.
