Description

These Cajun Chicken Sloppy Joes are bold, spicy, and loaded with juicy seasoned chicken topped with a rich, creamy cheddar cheese sauce. Served on toasted brioche buns, they are the ultimate comfort food sandwich.


Ingredients

  • Cajun Chicken Filling
  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar (optional)
  • Salt to taste
  • Creamy Cheese Sauce
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar or American cheese, shredded
  • 1/4 tsp paprika
  • Salt pinch
  • Assembly
  • 46 brioche hamburger buns, split and toasted
  • Softened butter for toasting
  • Freshly ground black pepper


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Cook ground chicken until no longer pink, 5–7 minutes.
  3. Add onion and cook 3–4 minutes until softened.
  4. Stir in garlic and Cajun seasoning; cook 1 minute.
  5. Add tomato paste and mix until meat is coated.
  6. Pour in broth, tomato sauce, and Worcestershire sauce.
  7. Simmer 8–10 minutes until thickened.
  8. Season with salt and optional brown sugar.
  9. In a saucepan, melt butter and whisk in flour to form a roux.
  10. Slowly whisk in milk and cook until thickened.
  11. Add cheese and paprika; stir until smooth.
  12. Toast buns with butter until golden.
  13. Assemble sandwiches with chicken filling and cheese sauce.
  14. Top with black pepper and serve immediately.

Notes

  • Add extra Cajun seasoning for more spice.
  • Cheese sauce should not boil after adding cheese.
  • Best served fresh while hot and creamy.
