Cajun Chicken Sloppy Joes are loaded with spicy, savory ground chicken, topped with a creamy cheese sauce, and served on buttery toasted brioche buns. Perfect for a bold, comforting meal or party snack.
Ingredients
- Cajun Chicken Filling:
- 1 tbsp olive oil
- 1 lb ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp tomato paste
- 1/2 cup low-sodium chicken broth
- 1/2 cup tomato sauce (canned)
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar (optional)
- Salt, to taste
- Creamy Cheese Sauce:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 8 oz sharp cheddar or American cheese, freshly shredded
- 1/4 tsp paprika
- Pinch of salt
- Assembly:
- 4–6 brioche hamburger buns, split and toasted
- Softened butter, for toasting
- Freshly ground black pepper, to finish
Instructions
- Make the Cajun Chicken Filling: Heat olive oil in a skillet over medium-high. Add ground chicken; cook 5–7 minutes until no longer pink.
- Stir in onion; cook 3–4 minutes until translucent. Add garlic and Cajun seasoning; cook 1 minute.
- Mix in tomato paste until meat is glossy. Pour in chicken broth, tomato sauce, and Worcestershire sauce; stir.
- Simmer on low, uncovered, 8–10 minutes until thick. Season with salt; add brown sugar if desired.
- Make the Creamy Cheese Sauce: Melt butter in a saucepan over medium heat. Whisk in flour; cook 1 minute.
- Slowly whisk in milk; cook 4–5 minutes until thickened. Reduce heat, stir in cheese and paprika until silky. Do not boil.
- Assemble: Butter buns and toast 1–2 minutes until golden. Spoon chicken onto bottom buns, ladle cheese sauce on top, grind black pepper, cap with top bun, and serve immediately.
