Description

Cajun Chicken Sloppy Joes are loaded with spicy, savory ground chicken, topped with a creamy cheese sauce, and served on buttery toasted brioche buns. Perfect for a bold, comforting meal or party snack.


Ingredients

  • Cajun Chicken Filling:
  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce (canned)
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar (optional)
  • Salt, to taste
  • Creamy Cheese Sauce:
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar or American cheese, freshly shredded
  • 1/4 tsp paprika
  • Pinch of salt
  • Assembly:
  • 46 brioche hamburger buns, split and toasted
  • Softened butter, for toasting
  • Freshly ground black pepper, to finish


Instructions

  1. Make the Cajun Chicken Filling: Heat olive oil in a skillet over medium-high. Add ground chicken; cook 5–7 minutes until no longer pink.
  2. Stir in onion; cook 3–4 minutes until translucent. Add garlic and Cajun seasoning; cook 1 minute.
  3. Mix in tomato paste until meat is glossy. Pour in chicken broth, tomato sauce, and Worcestershire sauce; stir.
  4. Simmer on low, uncovered, 8–10 minutes until thick. Season with salt; add brown sugar if desired.
  5. Make the Creamy Cheese Sauce: Melt butter in a saucepan over medium heat. Whisk in flour; cook 1 minute.
  6. Slowly whisk in milk; cook 4–5 minutes until thickened. Reduce heat, stir in cheese and paprika until silky. Do not boil.
  7. Assemble: Butter buns and toast 1–2 minutes until golden. Spoon chicken onto bottom buns, ladle cheese sauce on top, grind black pepper, cap with top bun, and serve immediately.
