  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • Salt to taste
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/3 cup heavy cream or coconut cream
  • 1/2 cup shredded mozzarella or plant-based cheese (optional)
  • 2 cups baby spinach or chopped kale
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Cook onion for 4–5 minutes until translucent. Add garlic and stir 30 seconds.
  2. Add red pepper flakes, smoked paprika, oregano, thyme, black pepper, and salt. Cook 1 minute.
  3. Stir in tomato paste, cook 1–2 minutes. Add diced tomatoes, simmer 5 minutes.
  4. Add butter beans and vegetable broth. Simmer 10–12 minutes until sauce thickens.
  5. Lower heat, stir in cream and greens, cook 2–3 minutes until wilted and creamy.
