Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups cooked chicken, chopped
- 2 cups broccoli florets, chopped small
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add the diced onion and cook for about 3 minutes until softened. Stir in garlic and cook 30 seconds.
- Add the orzo and toast for 1–2 minutes.
- Pour in chicken broth and milk, then add salt and pepper. Stir well.
- Add chopped broccoli and bring to a gentle simmer.
- Cook 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Stir in cooked chicken, cheddar cheese, and Parmesan until melted and creamy.
- Remove from heat and serve warm.

- Add crushed red pepper for heat.
- Use rotisserie chicken to save time.
