Description

Cheesy Chicken Broccoli Orzo is a creamy, one-pan comfort meal with tender orzo, juicy chicken, soft broccoli, and melty cheddar and Parmesan. Quick, easy, and perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups cooked chicken, chopped
  • 2 cups broccoli florets, chopped small
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add the diced onion and cook for about 3 minutes until softened. Stir in garlic and cook 30 seconds.
  3. Add the orzo and toast for 1–2 minutes.
  4. Pour in chicken broth and milk, then add salt and pepper. Stir well.
  5. Add chopped broccoli and bring to a gentle simmer.
  6. Cook 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  7. Stir in cooked chicken, cheddar cheese, and Parmesan until melted and creamy.
  8. Remove from heat and serve warm.

  • Add crushed red pepper for heat.
