Description
Cheesy Taco Potatoes are crispy roasted potatoes topped with seasoned taco beef, melted cheddar cheese, and your favorite taco toppings. This easy and hearty dinner is perfect for busy weeknights and family meals.
Ingredients
- 1 ½ lbs russet potatoes, scrubbed and cut into small cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 ½ cups shredded cheddar cheese
- Optional toppings: sour cream, diced tomatoes, green onions, jalapeños
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss cubed potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Spread potatoes evenly on the baking sheet and roast for 30–35 minutes, flipping halfway through, until crispy and golden.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease.
- Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
- Remove potatoes from oven, top with seasoned beef and shredded cheese.
- Return to oven for 5 minutes, or until cheese is melted.
- Add desired toppings and serve hot.
Notes
- Swap ground beef for ground turkey or chicken for a lighter option.
- For extra crispiness, broil for 2–3 minutes at the end.
- You can make it vegetarian by using black beans instead of beef.
