Description
Cheesy Tomato Tortellini Soup is a rich, creamy, and comforting soup made with tender cheese tortellini, tomato soup base, herbs, and melted Parmesan cheese.
Ingredients
- 9 oz frozen cheese tortellini
- 2 cans (10.75 oz each) tomato soup
- 2 cups chicken broth
- 2 cups milk (skim preferred)
- 2 cups half and half
- 1/2 cup chopped sun dried tomatoes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 cup shredded Parmesan cheese (plus extra for garnish)
Instructions
- Bring salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
- In a large pot, combine tomato soup, chicken broth, milk, half and half, sun dried tomatoes, onion powder, garlic powder, basil, and salt.
- Heat over medium, stirring frequently until hot but not boiling.
- Reduce heat to low and add cooked tortellini. Stir gently.
- Stir in Parmesan cheese until melted and creamy.
- Heat for a few more minutes without boiling.
- Serve hot and garnish with extra Parmesan cheese if desired.
Notes
- Do not boil after adding cheese to keep the texture smooth.
- Add spinach for extra nutrients.
- Use vegetable broth for a vegetarian version.
