Description

Cheesy Tomato Tortellini Soup is a rich, creamy, and comforting soup made with tender cheese tortellini, tomato soup base, herbs, and melted Parmesan cheese.


Ingredients

  • 9 oz frozen cheese tortellini
  • 2 cans (10.75 oz each) tomato soup
  • 2 cups chicken broth
  • 2 cups milk (skim preferred)
  • 2 cups half and half
  • 1/2 cup chopped sun dried tomatoes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 cup shredded Parmesan cheese (plus extra for garnish)


Instructions

  1. Bring salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
  2. In a large pot, combine tomato soup, chicken broth, milk, half and half, sun dried tomatoes, onion powder, garlic powder, basil, and salt.
  3. Heat over medium, stirring frequently until hot but not boiling.
  4. Reduce heat to low and add cooked tortellini. Stir gently.
  5. Stir in Parmesan cheese until melted and creamy.
  6. Heat for a few more minutes without boiling.
  7. Serve hot and garnish with extra Parmesan cheese if desired.

Notes

  • Do not boil after adding cheese to keep the texture smooth.
  • Add spinach for extra nutrients.
