Description
Chicken Fajita Rice is a bold and colorful Tex-Mex dish made with seasoned chicken, sautéed peppers and onions, and fluffy rice. Perfect for an easy family meal.
Ingredients
- 1 lb chicken breast, sliced
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 2 cups cooked rice
- ¼ cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and season with chili powder, cumin, paprika, salt, and pepper. Cook 5–7 minutes until done.
- Add bell pepper and onion. Sauté 3–4 minutes until tender. Stir in garlic and cook 1 minute.
- Combine cooked rice with the chicken mixture and toss well.
- Serve garnished with cilantro and lime wedges.
Notes
- Adjust spice levels to taste.
- Serve with avocado or guacamole if desired.
- Store leftovers in the fridge for up to 3 days.
