Description

Chicken Fajita Rice is a bold and colorful Tex-Mex dish made with seasoned chicken, sautéed peppers and onions, and fluffy rice. Perfect for an easy family meal.


Ingredients

  • 1 lb chicken breast, sliced
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 cups cooked rice
  • ¼ cup fresh cilantro, chopped
  • Lime wedges, for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and season with chili powder, cumin, paprika, salt, and pepper. Cook 5–7 minutes until done.
  3. Add bell pepper and onion. Sauté 3–4 minutes until tender. Stir in garlic and cook 1 minute.
  4. Combine cooked rice with the chicken mixture and toss well.
  5. Serve garnished with cilantro and lime wedges.

Notes

  • Adjust spice levels to taste.
  • Serve with avocado or guacamole if desired.
  • Store leftovers in the fridge for up to 3 days.
