Ingredients

  • 1 cup elbow macaroni
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • 1 bay leaf
  • Chopped green onions or parsley for garnish (optional)


Instructions

  1. Dice the chicken, chop the onion, mince the garlic, and dice the carrots and celery.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant.
  4. Add the diced chicken to the pot. Cook until the chicken is browned on all sides.
