Ingredients
- 1 lb chicken, diced (preferably chicken breast or thighs)
- 1 cup elbow macaroni
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup whole milk
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup corn (fresh or frozen)
- 2 tablespoons vegetable oil
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (adjust to taste)
- 1 bay leaf
- Chopped green onions or parsley for garnish (optional)
Instructions
- Dice the chicken, chop the onion, mince the garlic, and dice the carrots and celery.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant.
- Add the diced chicken to the pot. Cook until the chicken is browned on all sides.
- Stir in the diced carrots, celery, and corn. Cook for about 5 minutes until the vegetables begin to soften.
- Add the chicken broth, whole milk, and bay leaf to the pot. Stir well to combine.
- Bring the mixture to a boil, then add the elbow macaroni. Reduce heat to low and let it simmer for 15-20 minutes or until the macaroni is cooked al dente.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
- Garnish with chopped green onions or parsley if desired.
