Ingredients

  • 2 boneless skinless chicken breasts, cubed
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup brown rice (uncooked)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • ½ cup plain Greek yogurt
  • 1 tbsp tahini or lemon juice
  • 1 clove garlic, minced
  • 12 tbsp water (to thin sauce)
  • Fresh parsley, optional (garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, paprika, salt, and pepper. Roast for 25 minutes until tender and lightly crispy.
  2. Season chicken with garlic powder, salt, and pepper. Cook in a skillet over medium heat until golden and fully cooked.
  3. Whisk Greek yogurt, tahini (or lemon juice), minced garlic, and water until smooth.
  4. Cook brown rice according to package instructions.
  5. Assemble bowls with rice, roasted sweet potatoes, and chicken. Drizzle with sauce and garnish with parsley if desired.
