Description

This Chipotle Chicken Recipe is smoky, spicy, and absolutely better than takeout! Tender chicken marinated in chipotle peppers, garlic, and lime — perfect for tacos, burrito bowls, or salads.


Ingredients

  • For the Marinade:
  • 2 lbs (900 g) boneless, skinless chicken thighs (or breasts)
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tbsp adobo sauce (from the can)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp oregano
  • Salt & black pepper to taste
  • For Serving:
  • Lime wedges
  • Fresh cilantro, chopped
  • Rice, tortillas, or salad (optional sides)


Instructions

  1. Marinate the Chicken: In a bowl, combine chipotle peppers, adobo sauce, olive oil, garlic, lime juice, smoked paprika, cumin, oregano, salt, and pepper. Add chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 8 hours for maximum flavor).
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–6 minutes per side, or until fully cooked and slightly charred on the edges.
  3. Rest and Slice: Let the chicken rest for 5 minutes before slicing. This keeps it juicy and flavorful.
  4. Serve & Enjoy: Serve with rice, in burrito bowls, tacos, or salads. Top with cilantro and a squeeze of lime for that authentic smoky-spicy flavor.
