Christmas Maraschino Cherry Shortbread Cookies are delightful, buttery treats enhanced with chopped maraschino cherries and optional mini chocolate chips.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup maraschino cherries, chopped
- 1/2 cup mini chocolate chips (optional)
- Extra powdered sugar for dusting
Instructions
- Cream together softened butter and powdered sugar until smooth.
- Mix in vanilla extract.
- Gradually add flour and salt, mixing until combined.
- Fold in chopped maraschino cherries and mini chocolate chips.
- Wrap dough in plastic and chill for at least 1 hour.
- Preheat oven to 325°F (165°C). Roll dough into 1-inch balls and place on parchment-lined sheets.
- Slightly flatten each ball with the bottom of a glass.
- Bake 14-16 minutes until edges turn golden.
- Cool slightly and dust tops with powdered sugar.
