Description

Delicious mini cheesecakes decorated as festive Christmas trees, perfect for holiday parties and celebrations.


Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 cup mixed berries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/3 cup melted white chocolate
  • 12 tablespoons milk
  • Green gel food coloring
  • Pomegranate arils, for decoration


Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham crumbs, butter, and sugar; press into muffin liners.
  3. Bake crusts for 5 minutes and cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then mix in vanilla and sour cream.
  6. Fill liners and bake 16–18 minutes until just set.
  7. Cool completely, then refrigerate for at least 2 hours.
  8. Simmer berries, sugar, and lemon juice to make compote.
  9. Beat butter, powdered sugar, and white chocolate to make buttercream.
  10. Pipe frosting, decorate with berries, and chill before serving.

  • Use fully softened cream cheese for best texture.
