Description
Delicious mini cheesecakes decorated as festive Christmas trees, perfect for holiday parties and celebrations.
Ingredients
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 cup mixed berries
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/3 cup melted white chocolate
- 1–2 tablespoons milk
- Green gel food coloring
- Pomegranate arils, for decoration
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham crumbs, butter, and sugar; press into muffin liners.
- Bake crusts for 5 minutes and cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla and sour cream.
- Fill liners and bake 16–18 minutes until just set.
- Cool completely, then refrigerate for at least 2 hours.
- Simmer berries, sugar, and lemon juice to make compote.
- Beat butter, powdered sugar, and white chocolate to make buttercream.
- Pipe frosting, decorate with berries, and chill before serving.
Notes
- Use fully softened cream cheese for best texture.
- Chill well before decorating.
- Fresh or frozen berries both work well.
