Ingredients
- 2 cups (240 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ tsp ground cinnamon
- 1 cup (240 ml) buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup (150 g) fresh peaches
- 8 oz (225 g) cream cheese
- ¼ cup (60 ml) heavy cream
- 1 tbsp lemon juice
- ½ cup (100 g) powdered sugar
- 2 cups (480 ml) vegetable oil
Instructions
- Whisk flour, sugar, baking powder, salt, and cinnamon in a large bowl until combined.
- Blend buttermilk, eggs, and vanilla in a separate bowl until smooth.
- Gradually add wet mixture to dry ingredients, stirring until just combined.
- Cover dough with a towel and let it rest for 15 minutes.
- Beat cream cheese until light and fluffy. Mix in heavy cream, lemon juice, and powdered sugar until smooth. Fold in diced, lightly cooked peaches.
- Roll rested dough to ½ inch thick. Cut out donuts using a donut cutter or two round cookie cutters.
- Preheat vegetable oil to 350°F (175°C) in a deep pan.
- Fry donuts in batches, turning until golden brown, about 2–3 minutes per side.
- Drain on paper towels and toss in sugar and cinnamon.
