Ingredients

  • 4 boneless, skinless chicken breasts (similar size for even cooking)
  • 1 cup cottage cheese (full-fat or low-fat)
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray, for greasing the dish
  • Optional garnish: chopped parsley or chives


Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray an 8×8-inch baking dish with olive oil.
  2. Blend cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper in a blender until smooth and creamy.
  3. Place chicken breasts in the baking dish and pour the blended sauce evenly over them.
  4. Bake uncovered for 30–35 minutes, until chicken reaches 165°F (74°C) and sauce is bubbling with light golden spots.
  5. Let rest 5 minutes before serving. Garnish with parsley or chives if desired.
