Ingredients

  • 1 cup (256g) whole milk small curd cottage cheese (4% milkfat, high protein)
  • Seasonings of your choice (optional)
  • Parmesan cheese (optional)


Instructions

  1. Oven Method:
  2. Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper and lightly spray.
  3. If desired, drain any excess liquid from the cottage cheese.
  4. Use a 1-tablespoon cookie scoop to place mounds onto the baking sheet, spacing about 2 inches apart. Flatten to about 1/4 inch thick using the back of a spoon.
  5. Sprinkle with seasonings or Parmesan cheese if using.
  6. Bake for 40–50 minutes until edges are dark brown and tops are golden brown. Begin checking at 20 minutes.
  7. Cool completely on the baking sheet before removing.
  8. Microwave Method:
  9. Line a microwave-safe plate with parchment paper.
  10. Drain excess liquid if needed and spread an even thin layer of cottage cheese on the plate.
  11. Season if desired.
  12. Microwave for 2–3 minutes. Check and continue in short intervals if needed until crisp.
  13. Let cool completely before serving.
