Ingredients
- 1 pound strawberries, hulled and sliced
- 1 pound blueberries
- 1 pound raspberries
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sponge cake or ladyfingers, crumbled
- 1/4 cup peppermint candies, crushed (optional)
- Fresh mint leaves for garnish
Instructions
- Whip the heavy cream until soft peaks form.
- In a separate bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
- Gently fold whipped cream into the mascarpone mixture.
- Layer crumbled cake in the bottom of small glasses.
- Add a layer of mixed berries.
- Spoon mascarpone cream over the berries.
- Repeat layers, finishing with cream.
- Top with crushed peppermint candies if desired.
- Chill at least 1 hour and garnish with fresh mint before serving.
