Description
Creamy Cottage Cheese Orzo is a rich and cheesy pasta dish made with whole milk cottage cheese, Parmesan, and eggs for a smooth, creamy texture. Perfect as a comforting side or main dish.
Ingredients
- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 cup whole milk cottage cheese (e.g., Friendship Dairies)
- 1 lb (450g) orzo pasta
- 4 cups vegetable or chicken broth
- Freshly ground black pepper, to taste
- Kosher salt, to taste
Instructions
- Prepare the cheese mixture: In a mini food processor or blender, combine 1 cup cottage cheese, 1 cup grated Parmesan, 2 eggs, a pinch of kosher salt, and freshly ground black pepper. Purée until smooth and set aside.
- Cook the orzo: In a medium pot, combine orzo pasta with 4 cups vegetable or chicken broth. Cook over medium-high heat, stirring often, until the liquid is absorbed and orzo is al dente, about 12–15 minutes.
- Combine and finish: Remove the pot from heat. Stir in the cheese mixture until well combined. Adjust seasoning with additional salt and pepper if needed.
- Serve hot and enjoy your creamy, cheesy orzo!
Notes
- Use full-fat cottage cheese for the creamiest texture.
- Freshly grated Parmesan works best for flavor.
- Optional: Garnish with chopped parsley or extra Parmesan before serving.
