Ingredients

  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 cup whole milk cottage cheese (e.g., Friendship Dairies)
  • 1 lb (450g) orzo pasta
  • 4 cups vegetable or chicken broth
  • Freshly ground black pepper, to taste
  • Kosher salt, to taste


Instructions

  1. Prepare the cheese mixture: In a mini food processor or blender, combine 1 cup cottage cheese, 1 cup grated Parmesan, 2 eggs, a pinch of kosher salt, and freshly ground black pepper. Purée until smooth and set aside.
  2. Cook the orzo: In a medium pot, combine orzo pasta with 4 cups vegetable or chicken broth. Cook over medium-high heat, stirring often, until the liquid is absorbed and orzo is al dente, about 12–15 minutes.
  3. Combine and finish: Remove the pot from heat. Stir in the cheese mixture until well combined. Adjust seasoning with additional salt and pepper if needed.
