A creamy and delicious Italian sausage rigatoni dish that is perfect for any occasion.
Ingredients
- 8 ounces rigatoni pasta
- 1 tablespoon olive oil
- 1 pound Italian sausage, mild or spicy, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- In a large skillet, heat olive oil over medium heat. Cook Italian sausage, breaking it apart, until browned and cooked through (5-7 minutes).
- Add diced onion and cook until softened (3-4 minutes). Stir in garlic, oregano, and red pepper flakes (if using) and cook 1-2 more minutes.
- Pour in heavy cream and simmer. Stir in Parmesan until melted and creamy. Season with salt and pepper.
- Add cooked rigatoni, tossing to coat. If sauce is too thick, add reserved pasta water to reach desired consistency.
- Serve immediately, garnished with chopped parsley and extra Parmesan if desired.
