Description

A creamy and delicious Italian sausage rigatoni dish that is perfect for any occasion.


Ingredients

  • 8 ounces rigatoni pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, mild or spicy, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a large skillet, heat olive oil over medium heat. Cook Italian sausage, breaking it apart, until browned and cooked through (5-7 minutes).
  3. Add diced onion and cook until softened (3-4 minutes). Stir in garlic, oregano, and red pepper flakes (if using) and cook 1-2 more minutes.
  4. Pour in heavy cream and simmer. Stir in Parmesan until melted and creamy. Season with salt and pepper.
  5. Add cooked rigatoni, tossing to coat. If sauce is too thick, add reserved pasta water to reach desired consistency.
  6. Serve immediately, garnished with chopped parsley and extra Parmesan if desired.
