Ingredients

  • 8 ounces rigatoni pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, mild or spicy, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook Rigatoni: Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. Cook Sausage: In a large skillet, heat olive oil over medium heat. Add Italian sausage, breaking it apart, and cook until browned and cooked through (5-7 minutes).
  3. Add Onion & Garlic: Add diced onion and cook until softened (3-4 minutes). Stir in minced garlic, oregano, and red pepper flakes (if using), cooking 1-2 more minutes.
  4. Add Cream & Cheese: Pour in heavy cream and bring to simmer. Stir in Parmesan until melted and creamy. Season with salt and pepper.
  5. Combine with Pasta: Add cooked rigatoni, tossing to coat. Add reserved pasta water if sauce is too thick.
  6. Serve: Garnish with chopped parsley and additional Parmesan if desired. Serve immediately.
