Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium carrot, peeled and diced
  • 2 celery stalks, diced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp dried Italian seasoning
  • 1 tsp salt (adjust to taste)
  • Β½ tsp black pepper
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 Β½ cups ditalini pasta (uncooked)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook Italian sausage in olive oil over medium-high heat until browned, breaking it up with a spoon. Remove and set aside.
  2. SautΓ© onion, carrot, and celery in the remaining drippings for 5-7 minutes. Add garlic and cook 1-2 minutes.
  3. Add chicken broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Simmer 10-15 minutes until vegetables are tender.
  4. Add uncooked ditalini pasta. Simmer 10-12 minutes until pasta is cooked, stirring occasionally.
  5. Reduce heat to low, stir in heavy cream and Parmesan cheese until creamy and smooth.
  6. Return cooked sausage to the pot. Simmer 5 more minutes. Adjust seasoning as needed.
  7. Ladle into bowls and garnish with fresh parsley. Serve hot.
