This indulgent soup combines creamy Parmesan with the bold flavors of Italian sausage and hearty ditalini pasta. Rich, flavorful, and perfect for a cozy meal.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium carrot, peeled and diced
- 2 celery stalks, diced
- 4 cups chicken broth (low-sodium preferred)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp dried Italian seasoning
- 1 tsp salt (adjust to taste)
- Β½ tsp black pepper
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 Β½ cups ditalini pasta (uncooked)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook Italian sausage in olive oil over medium-high heat until browned, breaking it up with a spoon. Remove and set aside.
- SautΓ© onion, carrot, and celery in the remaining drippings for 5-7 minutes. Add garlic and cook 1-2 minutes.
- Add chicken broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Simmer 10-15 minutes until vegetables are tender.
- Add uncooked ditalini pasta. Simmer 10-12 minutes until pasta is cooked, stirring occasionally.
- Reduce heat to low, stir in heavy cream and Parmesan cheese until creamy and smooth.
- Return cooked sausage to the pot. Simmer 5 more minutes. Adjust seasoning as needed.
- Ladle into bowls and garnish with fresh parsley. Serve hot.
