Delicious spaghetti with shrimp in a creamy, cheesy sauce. Perfect for a quick, indulgent weeknight meal.
Ingredients
- 1 pound spaghetti
- 1 pound shrimp, peeled and deveined
- 4 ounces cream cheese, softened
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook spaghetti according to package directions. Drain, reserving 1/2 cup pasta water.
- Melt butter in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté 30 seconds.
- Add shrimp; cook 2-3 minutes per side until pink. Remove and set aside.
- Reduce heat to low. Add cream cheese and stir until smooth. Gradually whisk in heavy cream, then Parmesan. Season with salt and pepper.
- Add cooked spaghetti to the sauce and toss. If too thick, add reserved pasta water to reach desired consistency.
- Return shrimp to the skillet; toss gently. Serve garnished with parsley.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat gently over low heat, adding a splash of milk or cream to prevent dryness.
- Serve with crusty bread to soak up the sauce.
- Optional: add a squeeze of lemon juice before serving for extra flavor.
