Description

Crispy Cheesy Beef Taquitos are an easy and irresistible snack or meal, filled with seasoned ground beef and melty cheese, baked until golden and crunchy.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 cup tomato sauce or salsa
  • 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
  • 1012 small flour or corn tortillas
  • 1 cup shredded cheese (for topping)
  • Cooking spray or oil
  • Sour cream, guacamole, or salsa for dipping
  • Fresh cilantro or green onions for garnish


Instructions

  1. Cook ground beef and onion in a skillet over medium heat until browned, 5–7 minutes.
  2. Add garlic, chili powder, cumin, paprika, salt, and pepper. Stir well.
  3. Stir in tomato sauce and cook 2 minutes until slightly thickened.
  4. Remove from heat and mix in 1 cup shredded cheese until creamy.
  5. Preheat oven to 425°F (220°C).
  6. Warm tortillas briefly to make them pliable.
  7. Spoon about 2 tablespoons of filling onto each tortilla and roll tightly.
  8. Place seam-side down on a parchment-lined baking sheet.
  9. Brush or spray with oil and sprinkle with extra cheese.
  10. Bake 15–18 minutes until golden and crispy. Broil 1–2 minutes if desired.
  11. Serve hot with dipping sauces and garnish.
