Description
Crispy Cheesy Beef Taquitos are an easy and irresistible snack or meal, filled with seasoned ground beef and melty cheese, baked until golden and crunchy.
Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1/4 cup tomato sauce or salsa
- 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
- 10–12 small flour or corn tortillas
- 1 cup shredded cheese (for topping)
- Cooking spray or oil
- Sour cream, guacamole, or salsa for dipping
- Fresh cilantro or green onions for garnish
Instructions
- Cook ground beef and onion in a skillet over medium heat until browned, 5–7 minutes.
- Add garlic, chili powder, cumin, paprika, salt, and pepper. Stir well.
- Stir in tomato sauce and cook 2 minutes until slightly thickened.
- Remove from heat and mix in 1 cup shredded cheese until creamy.
- Preheat oven to 425°F (220°C).
- Warm tortillas briefly to make them pliable.
- Spoon about 2 tablespoons of filling onto each tortilla and roll tightly.
- Place seam-side down on a parchment-lined baking sheet.
- Brush or spray with oil and sprinkle with extra cheese.
- Bake 15–18 minutes until golden and crispy. Broil 1–2 minutes if desired.
- Serve hot with dipping sauces and garnish.
Notes
- Adjust seasoning to taste.
- Add diced jalapeños for extra heat.
- Taquitos can be frozen before baking for quick meals.
