Description
Crispy Chicken Waffles Delight combines golden, crunchy chicken with fluffy, cheesy waffles, perfect for breakfast, lunch, or dinner.
Ingredients
- Cooking spray
- 4 oz pork rinds
- 1 cup freshly grated Parmesan
- 1 large egg
- 2 Tbsp mayonnaise
- 2 Tbsp water
- Kosher salt
- Freshly ground black pepper
- 1 lb boneless skinless chicken breasts, cut into strips
- 4 large eggs
- 2 cups almond flour
- 1 cup shredded cheddar
- 1 cup milk
- 1 cup sour cream
- 1 tsp baking powder
- Kosher salt and black pepper
- Cooking spray
- 2 Tbsp freshly chopped chives, for garnish
- Butter, optional
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper and grease with cooking spray.
- Process pork rinds in a food processor until fine. Mix with Parmesan in a shallow dish.
- Whisk egg, mayonnaise, and water in a bowl. Season with salt and pepper.
- Dip chicken in egg mixture, coat with pork-rind mixture, place on baking sheet.
- Bake chicken 25–30 minutes until golden.
- Preheat waffle iron. Whisk eggs, then add almond flour, cheddar, milk, sour cream, and baking powder. Season with salt and pepper.
- Grease waffle iron. Cook 1/2 cup batter per waffle for 4–5 minutes until golden. Repeat.
- Serve chicken with waffles, garnish with chives and butter if desired.

- Ensure chicken reaches 165°F internal temperature.
