Description
Crock Pot Birria Tacos are tender, slow-cooked beef tacos with rich, flavorful sauce. Perfect for a hands-off, savory meal.
Ingredients
- 3 pounds beef chuck roast
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion
- 4 garlic cloves
- 1 can diced tomatoes (14.5 oz)
- 2 cups beef broth
- Corn tortillas
- Fresh cilantro and diced onion for garnish
- 1 tsp vinegar
- 1 tsp dried oregano
- 1 tsp cumin
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Soak dried chilies in hot water for 15 minutes. Blend with onion, garlic, and tomatoes until smooth.
- Place beef in crockpot and pour chili mixture over it.
- Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
- Cook on low for 8–10 hours until beef is tender.
- Shred beef using forks and mix back with the sauce.
- Fry corn tortillas in oil until crispy. Fill with beef mixture and top with cilantro and diced onion.
Notes
- Serve with consomé (sauce) for dipping.
- Use leftover beef in quesadillas or burritos.
- Add lime wedges for extra flavor.
