Description

This delightful Crock Pot Creamy Chicken Parmesan Soup combines tender chicken, rich Parmesan, and classic Italian flavors in an easy slow-cooker meal. Comforting, hearty, and perfect for busy days.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach
  • Fresh basil, for garnish


Instructions

  1. Place chicken breasts in the bottom of the Crock Pot.
  2. Add diced onion and minced garlic on top.
  3. Pour in chicken broth and diced tomatoes; stir gently.
  4. Season with Italian seasoning, salt, and pepper.
  5. Cover and cook on LOW for 6 hours until chicken is tender.
  6. Remove chicken, shred with two forks, and return to the soup.
  7. Stir in heavy cream and Parmesan cheese until smooth.
  8. Add tortellini and spinach. Cook on HIGH for 30 minutes.
  9. Serve hot, garnished with fresh basil.

Notes

  • Serve with crusty bread or garlic bread.
  • Substitute half-and-half for a lighter version.
  • Add carrots or bell peppers for extra vegetables.
