Ingredients
- 1.5 lb boneless, skinless chicken breasts
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream (or half-and-half)
- 1 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt, to taste
- Pepper, to taste
- 1 cup tortellini (fresh or frozen)
- 1 cup fresh spinach
- Fresh basil, for garnish
Instructions
- Place chicken breasts in the bottom of the Crock Pot.
- Add diced onion and minced garlic on top.
- Pour in chicken broth and diced tomatoes; stir gently.
- Season with Italian seasoning, salt, and pepper.
- Cover and cook on LOW for 6 hours until chicken is tender.
- Remove chicken, shred with two forks, and return to the soup.
- Stir in heavy cream and Parmesan cheese until smooth.
- Add tortellini and spinach. Cook on HIGH for 30 minutes.
- Serve hot, garnished with fresh basil.

- Serve with crusty bread or garlic bread.
- Substitute half-and-half for a lighter version.
