Ingredients

  • 1.5 pounds beef stew meat, cut into 1-inch cubes
  • 1 pound baby potatoes, halved
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1 cup beef broth
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)


Instructions

  1. In a large bowl, combine beef cubes with olive oil, salt, pepper, thyme, rosemary, and paprika. Toss to coat evenly.
  2. Sear beef in a skillet over medium-high heat until browned on all sides (optional).
  3. Transfer beef to crockpot.
  4. In the same skillet, cook minced garlic in melted butter for 1-2 minutes until fragrant.
  5. Pour garlic butter over beef in crockpot.
  6. Add halved baby potatoes around beef. Pour beef broth over all.
  7. Stir gently to combine without breaking potatoes.
  8. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender and potatoes cooked.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Garnish with fresh parsley before serving, if desired.
