Description

A refreshing mango slaw with crisp vegetables and a tangy-sweet dressing, perfect as a side for easy meals or vegetarian dinners.


Ingredients

  • 2 ripe mangoes, peeled and diced
  • 2 cups green cabbage, finely shredded
  • 1 large carrot, grated
  • 1 red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp lime juice
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • Salt and pepper, to taste


Instructions

  1. In a large mixing bowl, combine mangoes, cabbage, carrot, red bell pepper, red onion, and cilantro. Toss well.
  2. In a small bowl, whisk together lime juice, honey or maple syrup, sesame oil, salt, and pepper.
  3. Pour dressing over the mango and vegetable mixture and toss gently to coat evenly.
  4. Let the slaw sit for 5-10 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature as a side dish.
  6. Optional: add diced avocado, chopped nuts, or chili flakes for extra flavor and crunch.
  7. Store leftovers in an airtight container in the refrigerator for up to 2 days.
