A refreshing mango slaw with crisp vegetables and a tangy-sweet dressing, perfect as a side for easy meals or vegetarian dinners.
Ingredients
- 2 ripe mangoes, peeled and diced
- 2 cups green cabbage, finely shredded
- 1 large carrot, grated
- 1 red bell pepper, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp lime juice
- 2 tbsp honey or maple syrup
- 1 tbsp sesame oil
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine mangoes, cabbage, carrot, red bell pepper, red onion, and cilantro. Toss well.
- In a small bowl, whisk together lime juice, honey or maple syrup, sesame oil, salt, and pepper.
- Pour dressing over the mango and vegetable mixture and toss gently to coat evenly.
- Let the slaw sit for 5-10 minutes to allow flavors to meld.
- Serve chilled or at room temperature as a side dish.
- Optional: add diced avocado, chopped nuts, or chili flakes for extra flavor and crunch.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
