Ingredients

- ½ cup Kalamata olives, sliced
- 1 cup Greek-style tzatziki sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- Add uncooked rice to the dish and spread evenly.
- Pour chicken broth over the rice, ensuring it is fully submerged.
- Layer cooked chicken evenly over the rice.
- Scatter cucumber, red onion, tomatoes, and olives on top.
- In a bowl, mix tzatziki sauce with garlic powder, oregano, salt, and pepper.
- Spread the sauce evenly over the casserole.
- Sprinkle crumbled feta cheese on top.
- Cover with foil and bake for 45 minutes, until rice is tender.
- Remove foil and bake an additional 10 minutes until lightly golden.
