Description

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • 1 cup grape tomatoes, halved
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup Greek-style tzatziki sauce
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Add uncooked rice to the dish and spread evenly.
  3. Pour chicken broth over the rice, ensuring it is fully submerged.
  4. Evenly distribute cooked chicken over the rice.
  5. Top with cucumber, red onion, tomatoes, and Kalamata olives.
  6. In a bowl, mix tzatziki sauce with garlic powder, oregano, salt, and pepper.
  7. Spread tzatziki mixture evenly over the casserole.
  8. Sprinkle crumbled feta cheese on top.
  9. Cover with foil and bake for 45 minutes, until rice is cooked.
  10. Remove foil and bake an additional 10 minutes until feta is lightly golden.
  11. Let rest 5 minutes, garnish with fresh parsley, and serve.
