Description
This Easy California Roll Cucumber Salad combines cucumber, imitation crab, avocado, and a creamy soy-sesame dressing for a fresh, crunchy, and flavorful snack or side.
Ingredients
- 1 1/2 tbsp soy sauce
- 2 tbsp cream cheese, softened
- 2 tbsp mayonnaise
- 2 tsp toasted sesame seeds
- 4 imitation crab sticks, chopped into 1/2-inch pieces
- 1/2 avocado, cubed (about 1/2-inch pieces)
- 1 large cucumber, thinly sliced (1/8-inch)
Instructions
- Slice the cucumber into 1/8-inch thick slices using a mandolin or sharp knife.
- Place the cucumber in a large container or glass jar. Add chopped crab, avocado, mayo, cream cheese, soy sauce, and sesame seeds.
- Cover the container and shake vigorously until all ingredients are well combined and coated evenly.
- Serve immediately, either in the jar or in a bowl. Optionally, sprinkle additional sesame seeds on top for garnish.
Notes
- Eat immediately for the freshest flavor.
- Can be made ahead and stored for a few hours in the fridge before mixing.
