Description

This Easy California Roll Cucumber Salad combines cucumber, imitation crab, avocado, and a creamy soy-sesame dressing for a fresh, crunchy, and flavorful snack or side.


Ingredients

  • 1 1/2 tbsp soy sauce
  • 2 tbsp cream cheese, softened
  • 2 tbsp mayonnaise
  • 2 tsp toasted sesame seeds
  • 4 imitation crab sticks, chopped into 1/2-inch pieces
  • 1/2 avocado, cubed (about 1/2-inch pieces)
  • 1 large cucumber, thinly sliced (1/8-inch)


Instructions

  1. Slice the cucumber into 1/8-inch thick slices using a mandolin or sharp knife.
  2. Place the cucumber in a large container or glass jar. Add chopped crab, avocado, mayo, cream cheese, soy sauce, and sesame seeds.
  3. Cover the container and shake vigorously until all ingredients are well combined and coated evenly.
  4. Serve immediately, either in the jar or in a bowl. Optionally, sprinkle additional sesame seeds on top for garnish.
