Ingredients
- 2 cups thinly sliced cucumbers
- ½ cup imitation crab meat, shredded
- ¼ cup shredded carrots
- ¼ avocado, diced
- 1 tablespoon sesame seeds
- 2 tablespoons mayonnaise
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- ½ teaspoon sugar
- Pinch of salt
Instructions
- Thinly slice cucumbers and place in a bowl. Add shredded carrots and imitation crab.
- In a small bowl, whisk together mayonnaise, rice vinegar, soy sauce, sugar, and salt until smooth.
- Pour dressing over cucumber mixture and toss gently to coat evenly.
- Fold in diced avocado and sprinkle sesame seeds on top.
- Serve chilled for a refreshing sushi-inspired salad. Optional: drizzle sriracha or sprinkle crushed nori for extra flavor.
