Description

Ingredients

  • 1/2 lb mini sweet peppers
  • 1/4 cup fat-free feta cheese
  • 2 light Laughing Cow cheddar cheese wedges
  • Everything bagel seasoning, to taste
  • 1/2 tsp chili crunch, oil drained
  • Optional: green onions or fresh herbs (parsley or cilantro) for garnish


Instructions

  1. Prepare the Peppers: Slice mini peppers in half lengthwise and remove seeds. Lay out on a serving platter or sheet pan.
  2. Mix the Cheese: Combine feta cheese with cheddar cheese wedges in a small bowl.
  3. Warm and Mix: Microwave cheese mixture for ~30 seconds to soften. Add everything bagel seasoning and chili crunch; mix until combined.
  4. Stuff the Peppers: Fill pepper halves with cheese mixture using a spoon.
  5. Serve: Garnish with herbs or green onions if desired. Serve immediately and enjoy!
