Description
Comforting, flavorful chicken ramen with tender chicken thighs, fresh vegetables, soft ramen eggs, and a rich umami broth. Perfect for a cozy meal at home.
Ingredients
- For the soup:
- 1 tbsp oil
- 1 onion, sliced
- 1 tbsp fresh grated ginger
- 4 cloves garlic, pressed or finely minced
- 1 tbsp chili garlic sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1/2 cup low sodium soy sauce
- 1/4 cup rice vinegar
- 4 oz shiitake mushrooms, stems removed, sliced
- 1/2–3/4 lb baby bok choy, sliced into quarters lengthwise
- 1 lb boneless skinless chicken thighs
- 4 cups low sodium chicken broth
- 1 cup water
- 1–2 packages fresh yakisoba noodles (~7 oz per package)
- For the ramen egg:
- 4 eggs
- 1/4 cup low sodium soy sauce
- 1/4 cup rice vinegar
- 3/4 cup water
- Optional toppings:
- Sliced green onion
- Cilantro
- Chili garlic sauce
- Sesame seeds
- Lime wedges
Instructions
- Prepare the ramen egg: Whisk together soy sauce, rice vinegar, and water. Make an ice bath. Boil eggs for 7 minutes, cool in ice bath for 3 minutes, peel, and marinate in sauce for several hours or overnight.
- Prepare the noodles: Boil fresh noodles 3 minutes, rinse with cold water, toss with a little oil, and set aside. Follow package instructions for other types.
- Prepare the soup: Heat oil in a large pot over medium-high heat. Sauté onion 5 minutes until soft. Add mushrooms and cook 2–3 minutes. Add garlic and ginger and cook 30 seconds until fragrant.
- Add chicken broth, water, soy sauce, rice vinegar, oyster sauce, fish sauce, and chili garlic sauce. Stir and bring to a simmer.
- Add chicken thighs and simmer 15–20 minutes until cooked through (165°F internal temperature). Remove chicken and shred with two forks.
- Return shredded chicken to broth, add bok choy, and cook 3–5 minutes. Remove from heat.
- Serve with noodles, ramen eggs, and optional toppings such as green onion, cilantro, sesame seeds, and lime wedges.
Notes
- Ramen eggs can be made ahead and stored up to 3 days in the fridge.
- Adjust chili garlic sauce for desired spice level.
- Use fresh noodles for best texture.
