Ingredients
- For the Muffins
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp butter, melted
- 2 tbsp maple syrup
- For the Filling
- 6 sausage patties, cooked and flattened
- 6 eggs, scrambled or fried
- 6 slices American cheese
- Optional Add-Ins
- Sharp cheddar cheese
- Turkey sausage
- Hot honey drizzle
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin well.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- Add milk, egg, melted butter, and maple syrup. Stir until just combined.
- Cook sausage patties until browned; drain and flatten slightly.
- Scramble or fry eggs to your preference.
- Spoon batter into muffin cups, filling about halfway.
- Add sausage, egg, and half a slice of cheese to each.
- Top with more batter until cups are just filled.
- Bake for 18–20 minutes until golden and puffed.
- Cool slightly before serving.
Notes
- Grease muffin tin generously to prevent sticking.
- Add jalapeños and pepper jack for a spicy version.
- Sprinkle cinnamon sugar on top for extra sweetness.
- Store in the fridge up to 4 days or freeze individually for easy reheating.
