Ingredients

  • For the Muffins
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp butter, melted
  • 2 tbsp maple syrup
  • For the Filling
  • 6 sausage patties, cooked and flattened
  • 6 eggs, scrambled or fried
  • 6 slices American cheese
  • Optional Add-Ins
  • Sharp cheddar cheese
  • Turkey sausage
  • Hot honey drizzle

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin well.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Add milk, egg, melted butter, and maple syrup. Stir until just combined.
  4. Cook sausage patties until browned; drain and flatten slightly.
  5. Scramble or fry eggs to your preference.
  6. Spoon batter into muffin cups, filling about halfway.
  7. Add sausage, egg, and half a slice of cheese to each.
  8. Top with more batter until cups are just filled.
  9. Bake for 18–20 minutes until golden and puffed.
  10. Cool slightly before serving.

Notes

  • Grease muffin tin generously to prevent sticking.
  • Add jalapeños and pepper jack for a spicy version.
  • Sprinkle cinnamon sugar on top for extra sweetness.
  • Store in the fridge up to 4 days or freeze individually for easy reheating.
