Description

Easy Pizza Cupcakes are a fun, bite-sized twist on classic pizza, baked in a muffin tin with golden biscuit crust, gooey cheese, rich sauce, and customizable toppings. Perfect for snacks, parties, or quick appetizers.


Ingredients

  • 2 (8-count) cans refrigerated flaky layer biscuit dough
  • 1 cup pizza or marinara sauce
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (optional)
  • ½ cup mini pepperoni slices
  • ½ cup finely diced bell peppers
  • ¼ cup finely diced red onion
  • ¼ cup sliced black olives
  • 2 tablespoons chopped fresh basil or dried oregano
  • Optional: cooked beef sausage, diced beef ham, sautéed mushrooms
  • Non-stick spray or olive oil


Instructions

  1. Preheat oven to 375°F (190°C) and grease muffin tin.
  2. Separate biscuits and flatten each into a 4-inch circle.
  3. Press dough into muffin cups forming small crust cups.
  4. Add 1 tablespoon sauce and 1 tablespoon mozzarella to each.
  5. Distribute toppings evenly among cups.
  6. Top with more mozzarella and optional Parmesan.
  7. Bake 15–20 minutes until golden and bubbly.
  8. Cool 5 minutes, then gently remove from tin.
  9. Garnish with basil or seasoning and serve warm.
