Easy Pizza Cupcakes are a fun, bite-sized twist on classic pizza, baked in a muffin tin with golden biscuit crust, gooey cheese, rich sauce, and customizable toppings. Perfect for snacks, parties, or quick appetizers.
Ingredients
- 2 (8-count) cans refrigerated flaky layer biscuit dough
- 1 cup pizza or marinara sauce
- 2 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese (optional)
- ½ cup mini pepperoni slices
- ½ cup finely diced bell peppers
- ¼ cup finely diced red onion
- ¼ cup sliced black olives
- 2 tablespoons chopped fresh basil or dried oregano
- Optional: cooked beef sausage, diced beef ham, sautéed mushrooms
- Non-stick spray or olive oil
Instructions
- Preheat oven to 375°F (190°C) and grease muffin tin.
- Separate biscuits and flatten each into a 4-inch circle.
- Press dough into muffin cups forming small crust cups.
- Add 1 tablespoon sauce and 1 tablespoon mozzarella to each.
- Distribute toppings evenly among cups.
- Top with more mozzarella and optional Parmesan.
- Bake 15–20 minutes until golden and bubbly.
- Cool 5 minutes, then gently remove from tin.
- Garnish with basil or seasoning and serve warm.
Notes
- Drain cooked toppings well to prevent soggy cups.
- Rotate pan halfway through baking for even browning.
