Ingredients
- For the Filling
- 6 eggs, scrambled
- 1 pound sausage, crumbled (or plant-based alternative)
- 2 cups cheese (use dairy-free if needed)
- 1 cup hash browns (or roasted potatoes)
- 4 tortillas (gluten-free if desired)
- For the Gravy
- ½ pound sausage
- 2 tablespoons flour
- 2 cups milk (or plant-based milk)
- Seasonings to taste
Instructions
- Scramble eggs in a large skillet over medium heat for about 5 minutes.
- Add cooked sausage, cheese, and hash browns, stirring until cheese melts.
- Spoon filling into tortillas, roll tightly, and place seam-side down in a greased baking dish.
- Preheat oven to 350°F (175°C).
- In a saucepan, brown sausage for gravy, then stir in flour.
- Gradually whisk in milk and simmer until thickened.
- Pour gravy over enchiladas, cover with foil, and bake 25 minutes.
- Uncover and bake an additional 10 minutes until bubbly and golden.
- Let rest a few minutes before serving.
