Ingredients

  • 6 eggs, scrambled
  • 1 pound sausage, crumbled (or plant-based alternative)
  • 2 cups cheese (use dairy-free if needed)
  • 1 cup hash browns (or roasted potatoes)
  • 4 tortillas (gluten-free if desired)
  • For the Gravy
  • ½ pound sausage
  • 2 tablespoons flour
  • 2 cups milk (or plant-based milk)
  • Seasonings to taste


Instructions

  1. Scramble eggs in a large skillet over medium heat for about 5 minutes.
  2. Add cooked sausage, cheese, and hash browns, stirring until cheese melts.
  3. Spoon filling into tortillas, roll tightly, and place seam-side down in a greased baking dish.
  4. Preheat oven to 350°F (175°C).
  5. In a saucepan, brown sausage for gravy, then stir in flour.
  6. Gradually whisk in milk and simmer until thickened.
  7. Pour gravy over enchiladas, cover with foil, and bake 25 minutes.
