Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 teaspoon crushed red pepper flakes (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons butter over medium heat.
  3. Add garlic and red pepper flakes (if using) and sauté 1-2 minutes until fragrant, careful not to burn.
  4. Add shrimp in a single layer. Cook 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  5. Pour white wine and lemon juice into the skillet. Simmer 2-3 minutes, scraping up brown bits.
  6. Lower heat, add remaining 2 tablespoons butter, stirring until melted and combined.
  7. Return shrimp to skillet, toss in sauce, and add lemon zest and salt to taste.
  8. Serve shrimp scampi over pasta, garnish with chopped parsley.
