Description

Crispy tortilla roll ups filled with roast beef, melty provolone, and crunchy fried onions, served with a warm, savory au jus dipping sauce inspired by the classic French dip sandwich.


Ingredients

  • 4 large flour tortillas (about 12 inches)
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil
  • 1 can beef consommé (10.5 oz)
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Lay a tortilla flat. Add 2 slices of provolone over half, followed by about 3 ounces of roast beef and a handful of fried onions.
  3. Brush the far edge of the tortilla lightly with olive oil and roll tightly from the filled side. Place seam-side down on the baking sheet. Repeat with remaining tortillas.
  4. Brush the tops and sides lightly with olive oil for a crisp finish.
  5. Bake for 8–10 minutes, rotating the pan halfway through, until tortillas are golden and cheese begins to melt.
  6. Meanwhile, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan.
  7. Heat over medium and simmer for 3–4 minutes until hot and fragrant.
  8. Let roll ups rest for 2 minutes, then slice each into halves or thirds and serve with warm au jus for dipping.

  • Use freshly sliced deli roast beef for the best texture.
  • Serve immediately while tortillas are crisp and cheese is melted.
  • These also work great as party appetizers when sliced into smaller pieces.
