Description
A hearty and comforting slow cooker meal featuring tender beef bites and baby potatoes cooked in a rich garlic butter sauce with herbs and warm spices.
Ingredients
- 1.5 lbs beef stew meat, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 cup beef broth
- 1 tbsp olive oil
Instructions
- Cut beef into bite-sized pieces and halve the baby potatoes.
- Optional: Parboil potatoes for a few minutes to soften slightly.
- Heat olive oil in a skillet over medium-high heat and sear beef until browned on all sides.
- In a bowl, mix melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
- Add potatoes and beef to the slow cooker. Pour garlic butter mixture and beef broth over top.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is fork-tender.
- Let rest 10 minutes before serving.
Notes
- Searing the beef adds deeper flavor but can be skipped.
- Swap baby potatoes for carrots or mushrooms if desired.
- Leftovers store well in the fridge for up to 3 days.
