Description

A hearty and comforting slow cooker meal featuring tender beef bites and baby potatoes cooked in a rich garlic butter sauce with herbs and warm spices.


Ingredients

  • 1.5 lbs beef stew meat, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • 1 tbsp olive oil


Instructions

  1. Cut beef into bite-sized pieces and halve the baby potatoes.
  2. Optional: Parboil potatoes for a few minutes to soften slightly.
  3. Heat olive oil in a skillet over medium-high heat and sear beef until browned on all sides.
  4. In a bowl, mix melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
  5. Add potatoes and beef to the slow cooker. Pour garlic butter mixture and beef broth over top.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is fork-tender.
  7. Let rest 10 minutes before serving.

Notes

  • Searing the beef adds deeper flavor but can be skipped.
  • Swap baby potatoes for carrots or mushrooms if desired.
  • Leftovers store well in the fridge for up to 3 days.
