Description
Crispy garlic butter steak bites cooked with golden Yukon potatoes in a rich herb butter sauce for an easy and hearty skillet meal.
Ingredients
- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Add potatoes and season with garlic, thyme, oregano, salt, and pepper.
- Cook for 2–3 minutes before stirring, then continue cooking until golden and fork tender (8–10 minutes), stirring frequently.
- Remove potatoes and set aside.
- Increase heat to medium-high and add remaining ghee.
- Add steak cubes, season lightly with salt and pepper, and sear for at least 2 minutes before stirring.
- Cook until browned on all sides, about 1–2 more minutes.
- Return potatoes to the pan and mix everything together.
- Adjust seasoning and top with fresh parsley.
- Serve hot.
Notes
- Do not overcrowd the pan or potatoes will not crisp properly.
- Let steak sear without moving for best browning.
- You can add extra garlic butter at the end for more flavor.
