An easy and delightful Greek-inspired appetizer made with crisp cucumber, creamy feta, juicy tomatoes, and olives, finished with a bright lemon-olive oil drizzle.
Ingredients
- 1 large cucumber, cut into thick half-moon slices
- 6 oz feta cheese, cut into small cubes
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives, pitted
- Fresh dill or parsley, for garnish
- Lemon-Olive Oil Drizzle:
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1/2 teaspoon dried oregano
- Black pepper, to taste
Instructions
- Cut cucumber and feta into bite-sized pieces.
- On each toothpick or mini skewer, layer cucumber, feta, cherry tomato, and olive.
- Arrange assembled skewers on a serving platter.
- Whisk olive oil, lemon juice, oregano, and black pepper in a small bowl.
- Lightly drizzle the dressing over the skewers.
- Sprinkle with fresh dill or parsley and serve immediately.

- Best served fresh for optimal texture.
