Description

Ingredients

  • 1 large cucumber, cut into thick half-moon slices
  • 6 oz feta cheese, cut into small cubes
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • Fresh dill or parsley, for garnish
  • Lemon-Olive Oil Drizzle:
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried oregano
  • Black pepper, to taste


Instructions

  1. Cut cucumber and feta into bite-sized pieces.
  2. On each toothpick or mini skewer, layer cucumber, feta, cherry tomato, and olive.
  3. Arrange assembled skewers on a serving platter.
  4. Whisk olive oil, lemon juice, oregano, and black pepper in a small bowl.
  5. Lightly drizzle the dressing over the skewers.
  6. Sprinkle with fresh dill or parsley and serve immediately.
