Description

A viral, high-protein bowl combining sweet, spicy, and savory flavors with roasted sweet potatoes, taco-seasoned ground beef, creamy cottage cheese, and a drizzle of hot honey. Perfect for meal prep!


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 400°F. Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast 40–45 minutes, stirring halfway.
  2. In a skillet, heat remaining olive oil. Sauté diced onion until softened. Add ground beef, season with taco mix, and cook until browned.
  3. Assemble bowls with roasted sweet potatoes, ground beef, avocado slices, and cottage cheese.
  4. Drizzle hot honey on top and garnish with cilantro, red pepper flakes, or lime wedge if desired.

  • For extra creaminess, blend cottage cheese before adding.
  • Adjust hot honey to control heat level.
