These Healthy No Bake Cookie Dough Bars are gluten-free, vegan, and made with wholesome ingredients. A rich, chocolatey treat with no oven required!
Ingredients
- For the cookie dough layer:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup maple syrup
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened almond butter
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1/3 cup dairy-free chocolate chips
- For the chocolate topping:
- 1 cup dairy-free dark chocolate chips
- 1 tbsp coconut oil
Instructions
- Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, mix almond flour and coconut flour.
- Add maple syrup, melted coconut oil, almond butter, vanilla extract, and sea salt. Mix until a soft dough forms.
- Fold in the dairy-free chocolate chips.
- Press dough evenly into the prepared pan and smooth the top.
- Refrigerate for 20–30 minutes to firm up.
- Melt dark chocolate chips with coconut oil in 20-second microwave intervals, stirring until smooth.
- Pour melted chocolate over chilled base and spread evenly.
- Refrigerate again for 30–45 minutes until fully set.
- Lift out using parchment paper and slice into 9–12 bars.
Notes
- Sprinkle flaky sea salt on top before the chocolate sets for a sweet-salty flavor boost.
- Store in the refrigerator for best texture.
